RF site surveys are certainly important when deploying a wireless LAN in order to determine the optimum placement of access points. You need to carefully consider signal coverage (both uplink and downlink), potential for RF interference, and requirements (such as type of client devices and signal coverage areas). I recently posted a quiz on www.wi-figurus.com (click on the "Quiz" tab) that tests your knowledge on performing RF site surveys.
