Some WISPs use the Senao (Engenius) 2611 CB3 + Delux as a CPE device, inside of a Rootenna. Or with some other directional antenna.

The question is...

How does the CPE installer know when the signal strength of the CB3 in bridge mode is maxsimum,(when it's acting as a CPE device)?

It's only connected by an ethernet cable and there is no software on the laptop to tell what the received signal strength is. And there is no signal strength indication on the CB3.

So how is an installer to know if the CB3's directional antenna is pointed for the best signal strength?

there is a signal strength meter on the web interface under status. It only updates a few times a min.

Since the cb3 has a 2511 cd plus ext2 inside
you shoudl use a 2511 cd plus ext2 on a laptop to aim the antenna and then plug the antenan into the cb3.
