Does anyone know other than looking at the AP's how to find if someone is using a wireless laptop on a LAN ?

AirMagnet software has a find tool. It scans for active stations, you select the one you want to find it then clicks like a geiger counter as you get closer.

Kismet and view connected clients. . . it will show you all of the cleints connected to an AP
