As I know there are only maxmum 3 channels which have no interference. In some large hotsport, such as airport, all the three channels must be used because there must be tens of APs in such a hotspot.

My first question is: does it mean there can have only one WISP in one large hotspot?

My second question is: I have had a test with 2 APs. Each configured with the same channel but with different SSID. It seems the two APs work well. Each AP can communicate with the NIC with the same SSID. I wonder how it works. How can I prove there are or aren't interference between the two APs.

Austin Bergstrom airport (AUS) has two WISPs, Wayport and (Not quite sure who else) and they seem to peacefully coexist.
